Three years at the same shop in Deptford. Paid cash every Friday. He won't send me to school, says I'll learn more on the job. I mostly get PEX on new construction, boilers in the winter if they're short a guy. Good guy, but I'm not going anywhere. How do I leave without burning it?

Cash every Friday usually means no workers comp if you get hurt and no paperwork showing three years of experience when you want a license someday. That's the part that would worry me more than the PEX.
My father used to say never quit angry and never quit without the next job lined up. Small state. Everybody knows everybody. Line up the next shop, give him notice, thank him for the three years. That's it.
Gloucester County has plenty of shops that do service and repipes, not just new construction... ask around at the supply house, the counter guys know who's hiring and who's a nightmare lol

Not legal advice, but on the licensing side: start writing down every job, date, and who supervised you, now. If you ever go for a license you'll need to show experience, and cash with no records makes that hard.
